Peel and wash the daikon
Use a peeler or a mandoline and make long, bacon like strips.
Lay out the strips on kitchen towel, sprinkle with salt and let rest for 15 minutes.
Mix all the other ingredients in a large bowl
Wash the daikon strips under cold water to get rid of the salt and then add all strips to the marinade.
Cover the bowl and let the daikon marinade for at least 30 minutes.
Heat a pan on medium high heat.
Add 2 Tbsp Olive Oil to the pan.
Fry the daikon strips for 5 minutes, turning regularly to avoid burning the strips.
When the daikon starts to crisp, remove from the pan and lay the cooked strips over two chopsticks to allow them to further crisp into crinkled shapes that look like bacon.
1/2 lb (8 oz) Daikon Radish
4 TBS Soy Sauce
1.5 TBS Olive Oil
1 tsp Liquid Smoke
2.5 TBS Maple Syrup
1 TBS Nutritional Yeast
1 tsp Garlic Powder
1/2 tsp Mushroom Seasoning
1 tsp Smoked Paprika
Black Pepper to taste
