Gochu Doenjang Muchim - (Green Korean Peppers Seasoned with Doenjang)

Instructions

  1. Trim off the ends of the peppers

  2. Combine:

  3. doenjang (or soybean paste is a type of fermented bean paste made entirely of soybean and brine)

  4. gochujang (Gochujang or red chili paste is a savory, sweet, and spicy fermented condiment)

  5. garlic

  6. sugar or sugar substitute such as agave or honey

  7. Sesame Oil and Sesame Seeds

  8. Mix all ingredients well in a bowl.

  9. Add the peppers and toss everything with a spoon or by hand until each piece is well coated with the sauce. Adjust the seasoning to taste by adding more doenjang or gochujang.

Ingredients
  • 5 ounces mild green chili peppers (Korean asagi gochu) 6 to 8, depending on the size

  • 1.5 tablespoons doenjang (Korean feremented soybean paste)

  • 1/2 tablespoon gochujang, (Korean red chili pepper paste) or 1 teaspoon gochugaru (Korean red chili pepper flakes)

  • 1 teaspoon minced garlic

  • 1/2 teaspoon sugar or 2-3 teaspoons maesilcheong (Korean plum syrup) or any other sugar substitute of your choice

  • 2 teaspoons sesame oil

  • 2 teaspoons crushed sesame seeds
