Kalo (Taro) Burger
Grate recipe-ready kalo with a grater and set aside.
Drain canned chick peas and blend or mash into smaller pieces and set aside.
Finely chop onion and caramelize in a frying pan and set aside.
Finely chop the mushrooms and sauté in frying pan and set aside.
Finely chop green onion and herbs and set aside.
Combine the chick peas, kalo, ‘ulu flour, caramelized onion, sauteed mushroom, mustard, egg, herbs, spices, pepper and salt in a mixing bowl and mix together well.
Form burger sized patties. You will end up with about 7 to 8 patties depending on the size of each.
Fry the patties in a pan until both sides are golden brown with an ample amount of oil.
Serve on a bun with ketchup, mustard, cheese, tomato and lettuce or with any of your favorite burger toppings. Enjoy with ‘ulu pickles on the side!

1 can chick peas
½ cup ‘ulu flour
1 medium onion chopped
8 oz. mushrooms chopped
2 Tablespoon mustard
1 Tablespoon cumin
1 Tablespoon chili flakes
1Tablespoon onion powder
1 Tablespoon garlic powder
1 stalk green onion chopped
Herbs such as parsley, rosemary and thyme
1 Tablespoon salt
2 tsp. black pepper
