Rambutan Rose Lassi


  • Slit the fruit and peel off the hairy skin. It has a big seed inside which is toxic. So you need to carefully chop the white flesh You can either squeeze the juice out or chop around the seed. Whisk chilled yogurt and add it to a blender along with water. Add rose syrup and rose extract.

  • Then add the chopped rambutan and sugar. Blitz to make a smoothie consistency drink. Pour in serving glass and serve chilled.

  • You can add ice cubes to this drink as well. If doing so, reduce the water quantity. Rambutan Rose Lassi is ready. Garnish with chopped pistachios, rose syrup and saffron.


You can add milk instead of water.You can make this lassi adding any other fruit.

  • 2 cups yogurt (can be substituted with dairy free yoghurts)

  • 8-9 rambutan

  • 2 tbsp rose syrup

  • 1/4 tsp rose extract

  • 1/2 tbsp sugar optional

  • 1 cup water

  • Saffron rose syrup and chopped pistachios for garnish
