In a cast iron pan heat coconut oil and add onion and garlic when onion becomes translucent, about 4-5 minutes.
Add chayote squash (peel the skin and chop into 1/2 inch pieces)
Add seasoning and cook until squash is cooked through, about 8-10 minutes.
Enjoy with bowl of rice or flatbread.

1/4 tsp turmeric powder
1/2 tsp cumin powder
1/2 tsp salt or to tase
