Ukrainian Beet Soup (Barszcz ukrainski)


  1. Heat oil in a pan. When hot, add onion

  2. Fry until onion translucent

  3. Add 3 bay leaves

  4. Add salt

  5. Add potatoes, beets, and carrots, and fry for a few minutes

  6. Add 2 cups of water and boil for a few minutes until the veggies are getting soft

  7. Add the cabbage, can tomatoes, and can of beans

  8. Heat the remaining water and dissolve the veggie broth cubes

  9. Add the broth to the pot and bring to a boil

  10. Reduce heat and simmer for another 15 minutes

  11. Add the lemon or lime juice

  12. Add 1 TBS sugar, stir well and heat for several more minutes

  13. Top with sour creme or vegan sour creme

  14. Enjoy!

  • 1 large onion, cut into four chunks

  • 4 Beets, cubed

  • 1 can tomatoes, crushed

  • 1 can kidney Beans

  • 4 Russet Potatoes, cubed

  • 1/2 Head of Cabbage, shredded

  • 2 - 4 Carrots, cubed

  • 1 TBS Butter or Vegan Butter

  • 3 Bay Leaves

  • 1 TBS Sugar

  • Juice from one Lemon or Lime (whichever you have)

  • 2 cubes veggie broth (our choice is Knorr from KTA)

  • 6 or move cups of water
